Taxonomy is the system Drupal uses to classify content. You can create "Vocabularies" (categories) and "Terms" (tags) within them.

Application Example:

If you run a blog, you could create a vocabulary called "Topics" with terms like "Hosting", "Security", and "Software". These tags can then be assigned to any content type.
